Pork Tenderloin

Pork Tenderloin with Fruit
1 1/2 lbs. pork tenderloin
1/3 c. orange juice
2 tsp. ground cumin
1 tsp. garlic powder
1 tsp. ground black pepper
1/4 tsp. ground red pepper
pineapple, plums or prunes and raisins
With a fork pierce pork on
all sides. In a large reclosable bag combine orange juice, cumin,
garlic powder and black and red peppers. Add pork; seal, turning bag to
coat meat well. Marinate at room temperature for 10 minutes, turning
bag occasionally.
Preheat
oven. Using a roasting pan put pork and cover with foil .Bake until
tender, remove foil, add water if you need it.Cook until pork
browns. Slice pork into thin crosswise slices. In a small saucepan,
bring any remaining marinade to a boil; add fruit, serve with
marinade, if desired.
