While a Cape Cod Girl can cook anything, you can bet she gets awfully tired of making turkey the same old way every time, just putting it in the oven until it's done. This is a bit different and we think you'll like it.
- 1 large turkey
- 1/2 bottle cumin
- 8 tbs minced garlic
- 3 tbs salt
- 2 cups wine vinegar
- 1 large can pineapple juice
Put all ingredients in a large container (big enough to cover turkey)or the biggest zip-loc bag you can find.
Poke holes in turkey all over with a fork or similar.
Put turkey in the container and pour marinade into cavity
Marinate in fridge for two days, turning often
Then drain juices and bake at 350 until done (depending on weight) basting with juices from marinade
Make gravy from marinade and flour on top of your stove.
Serve with brown rice and lemon yams and Salsa
Slice 2 sweet onions very thin,
Squeeze fresh limes maybe 6 into the onions,
add 2 tsp salt, chopped cilantro and habanero peppers minced.
