Why is it the best food is the stuff made with what's left? Not the expensive cuts of meat but the cheap stuff that needs cooking a bit more carefully. Here we have one such, veal shanks with a rich sauce
- ingredients
- 1 c olive oil
- 1 onion, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 clove garlic finely chopped
- 1 c dry red line
- 1 bouquet made with thyme rosemary sage and a bay leaf
- 3 c concentrated beef stock (reduced)
- 3 c fresh marinara sauce
Dredge veal shanks in flour, put a heavy roasting pan on high heat on top of the stove. Add olive oil and add veal shanks and brown on all sides, then remove them when brown. Stir in the chopped veggies and the bouquet, season with salt and pepper . Now return the shanks to the pan; place uncovered in 500 degree oven for 10 mins, then stir in beef stock and marinara and wine. Roast for 1 hour or until tender.
So many ways to serve this, with pasta, or rice . Our favorite might be with a green salad and a nice red wine, crusty bread to get all that good sauce.
