Linguica Omelets

Eggs
Cheese, shredded cheddar goes best
Linquica, chopped fine
Onions, chopped fine
Bell Peppers, chopped fine
1 teaspoon butter
1 teaspoon vegetable or olive oil
I always add a little hot pepper as in habanero or jalapeno, but that's up to you


Place butter and oil in skillet, add onion, pepper and linquica.

Saute over high heat for several minutes until lightly browned. Add cheese.

Beat eggs together lightly and pour over ingredients gathered together into center of skillet. Cut quickly in half and fold over.

Season with salt and pepper to taste and serve straight away.




If you have never tasted linguica, you are really missing something. It is a Portuguese sausage, spicy but sweet....I absolutely love them! And there's nothing better than them with eggs...
And, serve these with home fries

Home fries
potatoes cut up & cooked in chunks
garlic minced about 1 tsp.
salt to taste
pepper, to taste
saute in butter till crispy add papricka
onions & green pepper too, if you like them

Everyone loves my crispy homefries. Butter is why. Don't use margarine.

There is a new Hot Sauce out by Tabasco, it's called green pepper sauce, mild but very excellant...jalapeno. I love it. It's on my home fries and eggs always.
For a more foreign taste try adding cilantro as well. It takes getting used to, but I am additcted to it.

Around here every one whips out the hot sauce too!
