Eggs Benedict
4 English muffins
4 slices Canadian bacon or thin sliced ham
4 eggs
Hollandaise sauce
Brown muffin while the ham or bacon is browning. Cook
eggs to your choice of doneness. While Hollandaise sauce is heating,
place meat on muffin. Then add egg. Add warmed Hollandaise sauce over
top.
HOLLANDAISE SAUCE:
Put 1/2 cup butter uncovered in pint glass cup.
Microwave 45-60 seconds. Add 3 tablespoons lemon juice. Beat 2 egg
yolks and slowly stir into butter mixture with a fork. Microwave
uncovered, stirring every 15 seconds until thickened for 1 minute. Let
stand 4 minutes before serving. Do not over cook or sauce will curdle.
