Boston Steamed Brown Bread

Baked beans without brown bread? Where's your sense of tradition?

Actually, the two may go together as much because the bread can go in the oven with the baked beans

  • 1 C. yellow cornmeal
  • 1 C rye flour
  • 1 C Graham flour
  • 2 TS baking soda
  • 1 TS salt
  • 2 C. buttermilk
  • 3/4 C. molasses
  • 1 C raisins ( you can soak these overnight in brandy)
  • butter, softened

Combine buttermilk, molasses and raisins in a separate bowl.
Add the liquid to the dry ingredients.
Pour the liquid into 1 lb coffee tins which have been buttered on the inside. Leave a little room for expansion.
Tie the lid on so the expanding bread won't break out of the mold. Steam for 3 hrs in 1 inch of water, either in a roasting pan in the oven or a Great Big Pot on top of the stove.

When we were little, at least one night a week we'd have baked beans, brown bread and steamed hot dogs for supper. As we got older, we discovered that you could put linguica sausage in the oven with the beans and brown bread, for about half an hour, and it would be just right.

This is also part of a traditional Cape Cod Xmas breakfast, with codfish cakes, linguica, eggs and smoked fish.
