Old and New

Boiled Ham

This was an old favorite of mine on a cold winter night,
It's sorta like soup, but heartier. This and some homemade bread...
And you could smell it in the chilly air for miles...
Well it doesn't get any better than that...New England Comfort Food.
The fire is emmitting rays of heat and you are
curled up in front of it with a great soup/meal....Ahhhhh




I
        Boiled Dinner
  • 2 1/2 - 3 lb. picnic ham  (I always used a smoked shoulder)                                  
  • 3-4 garlic cloves
  • 4-5 bay leaves
  • 12 peppercorns
  • 4-5 onions
  • Potatoes
  • Cabbage
  • Carrots
  • Turnip

Place ham in large Dutch oven. Cover with hot tap water. 

Add spices, simmer 2 1/2 hours. Do not boil it, simmer it... Or until the
meat begins to fall off the bone. With larger peices of meat it may take longer.
I always add Lottsa Cabbage! No one can escape the smell...
Problem is the wait to eat it...
Drain some water to add remaining ingredients.

 Simmer another 1 hour or until tender, this is really good with home
 made bread to sop up the juices.
