 Blackened Fish

FISH JOKE:
A young lady, sitting on her minnow bucket while fishing was approached by a man who asked her what she was fishing for? She replied, I'm fishing for a husband! He said ,"you won't catch one that way cause you're sitting on your bait!

Cajun Blackened Fish
  • 1 tablespoon paprika
  • 2 1/2 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 3/4 teaspoon white pepper
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/4 teaspoon sage
  • white fish fillets
  • vegetable oil
Mix all spices together.. Heat 1 tablespoon olive  oil in cast iron skillet on medium high heat until very hot, but not quite smoking. Rinse fish fillets and pat dry with paper towel. Rub a little oil on both sides of the fish and sprinkle spice mix on both sides , generously, if you like it hot. Sear the fish in the hot oil for about 1 minute. Flip it and cook the other side. If the fillets are thick, you may need to lower the heat and cover to fully cook the fish.
 We also make an onion and tomato salsa to go on top of the fish. Recipe below.

Onion & Cilantro Tomato Salsa
  • 1 Sweet Onion diced
  • 2 Ripe Tomatoes diced
  • 1/3 cup chopped fresh cilantro
  • 1 jalapeno or habanero pepper minced
  • Fresh Lemon or Lime Juice, (enough to cover the ingredients)
  • Salt to Taste
  • Minced garlic to taste
  • Corn can be added too if you like it
Mix all ingredients together in a glass bowl, refrigerate for 30 minutes, stir before serving, we serve it on top of blackened fish.

Serving suggestion: Dirty rice and red beans, and lots of cold brew!
