Traditional, yes. The story goes that the original baked beans came about when the (rather fundamentalist) early New Englanders wrere not permitted meat nor allowed to work on the Sabbath. However, no way are you going to face a day in New England without something substantial. So, the beans would be prepared the day before and baked in the oven overnight, to be ready the next day.
- 1-lb white beans
- 1 onion
- 4 tbsp salt
- 1/2 lb salt pork
- dash pepper
- 1/4 c ketchup
- 1 tsp. dry mustard
- 1/2 c. molasses
- water
Wash beans and soak in water overnight.
In the morning parboil for 30 minutes.
Quarter onion and place in bottom of crock with 1/2 of the salt pork.
Pour beans into the crock and place a nest of salt pork on top.
Add remaining ingrediants and enough boiling water to cover the beans.
Cover and bake at 350 for 5-6 hrs.
Check beans every 1-2 hrs and add water as needed.
